I made this based on ingredients I already had in my fridge and pantry
WHO I MADE IT FOR?
I made a tapas feast for a dinner party for a couple of people (Ashley, Kelsey, Pat, Travis, Travis’ Canadian friend with an autoimmune disorder). This was the easiest thing I made. Basically based on ingredients I happened to have at the time.
Cannellini Beans (1 can, drained)
Rosemary (3 tablespoons, chopped)
Thyme (3 tablespoons, chopped)
Garlic (2 cloves, minced)
Olive oil (1/2 cup)
Salt/Pepper (to taste)
Parsley (a few leaves per baguette slice)
- Place beans, herbs, garlic, olive oil and salt/pepper in sauce pan and heat over medium-high heat for 15 minutes.
- Transfer to blender or food processor and mix until smooth.
- Spread over each slice and top with parsley.
BOTTOM LINE: VERY easy, VERY filling.
