WHO I MADE IT FOR?
- 2/14/16: This was Valentine’s Day Lunch: Katherine texted me that she had eaten a fried egg bacon sandwich and somehow that inspired my hungover self to make a fried chicken sandwich. I call this fancy because I used brioche, baby butter lettuce and avocado. Next time, I think I’ll add a spicy aioli.
Chicken thighs (2 lbs, boneless)
Flour (1 cup)
Cayenne pepper (1/2 tablespoon)
Paprika (1.5 tablespoons)
Sugar (little less than 1/4 cup)
Eggs (2, beaten)
Brioche (four slices, toasted)
Butter lettuce (Handful)
Lemon (juice from 1/2 lemon)
Vegetable oil (lots, enough to fry the chicken in so around 2.5-3 cups depending on your vessel of frying)
- Bring oil to 375° F.
- Mix flour, cayenne, paprika, and sugar in one bowl. Add beaten eggs to separate bowl. Take chicken piece and dredge in flour mixture. Then coat with egg mixture. Then back in the flour mixture. Add to oil and fry for 4-6 mins.
- Toss butter lettuce with lemon juice.
- Layer sandwich: brioche, avocado, lemony butter lettuce, chicken piece, brioche. Serve with sriracha on the side (optional but delicious).
BOTTOM LINE: An investment for a sandwich, a meal meant to be quick and easy. But an investment that was worth dragging my hungover self out of bed for.
