ROASTED TURNIPS WITH ROSEMARY

This was another CSA-inspired dish. Because of my CSA, I’ve become a huge root/winter vegetable fan.

INGREDIENTS
Purple top turnips (4-5, washed, peeled, cubed–this would really work with any turnip or root vegetable)
Rosemary (to taste, I added about 5 sprigs of rosemary, loosely chopped)
Olive oil  (to coat)
Salt to taste

DIRECTIONS

  1. Preheat oven to 425° F.
  2. Toss turnips in olive oil. Add salt and rosemary. Place in roasting dish.
  3. Place turnips in the oven and roast for about 45 min-1 hour until they start turning golden brown. About 25 mins into roasting, mix the turnips around.

BOTTOM LINE: This tastes like winter comfort food without the guilt.
