BRUSSELS SPROUTS WITH BACON AND PINE NUTS

WHO I MADE IT FOR?
I made this last night for Kelsey and Ashley; however, this has been a side dish that I’ve whipped up a couple of times when I needed something last minute. I usually have bacon and pine nuts on hand, and this is easy to adopt for larger crowds.

INGREDIENTS
Baby Brussels sprouts (1 lb, sprouts cut in half)
Bacon (5 slices, chopped)
Pine nuts (3 tablespoons)

DIRECTIONS

  1. Add bacon bits to wok over med heat until cooked through.
  2. Remove bacon using slotted spoon, leaving behind some of the bacon grease.
  3. Add brussels sprouts to wok and cook over high heat for about 4 mins until starting to brown.
  4. Add pine nuts. Reduce heat to med and cover. Continue to cook for about 8 mins until pine nuts are light brown and brussel sprouts are soft.

BOTTOM LINE: An easy, sturdy side dish that complements and doesn’t overwhelm entrees.
