WHO I MADE IT FOR?
This was another CSA inspired meal that I made for Ashley and Linsday before Christmas break. I loved the addition of beets to this salad, so much that I think this makes an entirely new salad.

INGREDIENTS
Pistachio dressing (recipe here)
Luccinato kale (1 bunch, stems removed, sliced into very thin ribbons)
Beets (2-3)
Olive oil

DIRECTIONS

  1. Preheat oven to 425°. Add beets to baking dish and drizzle lightly with olive oil. Bake for 1 hour until beets are soft and skin can easily be removed (after cooling for a bit).
  2. Meanwhile, make the pistachio dressing.
  3. Once beets are ready, using large side of grater, grate beets.
  4. Combine beets, kale and dressing. Toss well. Serve immediately.

BOTTOM LINE: The dressing might make anything great, but the kale and beets compliment each other well. New favorite salad!
