SMASHED POTATO SALAD

Given the number of potatoes, it doesn’t really make as much as you would think.

5/18/15: I had a “picnic” food style dinner and made this as one of the sides. I saw this on Bon Appetit recently but ended up nixing a lot of the ingredients and giving it a twist of my own. Next time I’m going to add bacon.

INGREDIENTS
Baby red potatoes (~3 lbs)
Scallions (8, sliced thin, some green parts)
Sage (2 tablespoons, minced)
Mayo (1/2 cup)Lemon juice (from 1/2 lemon)
Olive oil
Bacon (optional)

DIRECTIONS

  1. Preheat oven to 450. Place potatoes in pot covered with 1 inch of cold water. Bring to a boil and then let simmer for 15-20 mins until tender. Drain potatoes. Using flat bottomed cup (or something similar), smash potatoes. Place on baking sheet(s). Drizzle with olive oil. Bake for 25 mins until crispy and golden.
  2. While potatoes are baking, cook bacon on stove top. When crispy, remove and crumble. Reserve for later.
  3. Mix mayo, lemon, bacon and sage in bowl. Add potatoes and scallions. Mix well. Add mayo or lemon to taste.

BOTTOM LINE: Cool presentation, Nice and crunch potato salad. Worth the (little amount of) effort and will definitely impress your fellow picnic goers.
