Given the number of potatoes, it doesn’t really make as much as you would think.
WHO I MADE IT FOR?
5/18/15: I had a “picnic” food style dinner and made this as one of the sides. I saw this on Bon Appetit recently but ended up nixing a lot of the ingredients and giving it a twist of my own. Next time I’m going to add bacon.
Baby red potatoes (~3 lbs)
Scallions (8, sliced thin, some green parts)
Sage (2 tablespoons, minced)
Mayo (1/2 cup)Lemon juice (from 1/2 lemon)
- Preheat oven to 450. Place potatoes in pot covered with 1 inch of cold water. Bring to a boil and then let simmer for 15-20 mins until tender. Drain potatoes. Using flat bottomed cup (or something similar), smash potatoes. Place on baking sheet(s). Drizzle with olive oil. Bake for 25 mins until crispy and golden.
- While potatoes are baking, cook bacon on stove top. When crispy, remove and crumble. Reserve for later.
- Mix mayo, lemon, bacon and sage in bowl. Add potatoes and scallions. Mix well. Add mayo or lemon to taste.
BOTTOM LINE: Cool presentation, Nice and crunch potato salad. Worth the (little amount of) effort and will definitely impress your fellow picnic goers.
