WHO I MADE IT FOR?
I discovered this dish on Food52 over 2 years ago and have been making it religiously ever since. I’ve altered the recipe slightly to my taste buds. I make this in every season with all sorts of cuisines. People BEG for it.

INGREDIENTS:
Asparagus (1 bunch, cut in 2 inch pieces)
Leek (sliced thin, white part only)
Garlic (2 cloves, minced)
Pine nuts (i usually add about three tablespoons)
Lemon juice (from 1 lemon)
Shallot (1, diced)
Bacon (the more, the better. I usually use more than half of the package)
Cayenne pepper (about 1 teaspoon)
DIRECTIONS:

  1. Heat skillet over med heat. Add bacon–you can add prechopped pieces or just add the entire piece of bacon and crumble it later. I usually do the latter because I’m lazy. Cook until crispy. Remove from pan but leave the bacon grease.
  2. Add asparagus and saute in glorious bacon fat until starting to become tender and browned about 12 mins.
  3. Add leek, shallots, garlic and pine nuts, cook for another 3-5 mins over lower heat.
  4. Add lemon juice and cayenne. Toss to coat. Serve!

BOTTOM LINE: The best side dish I’ve ever made.
