WHO I MADE IT FOR?
I discovered this dish on Food52 over 2 years ago and have been making it religiously ever since. I’ve altered the recipe slightly to my taste buds. I make this in every season with all sorts of cuisines. People BEG for it.
Asparagus (1 bunch, cut in 2 inch pieces)
Leek (sliced thin, white part only)
Garlic (2 cloves, minced)
Pine nuts (i usually add about three tablespoons)
Lemon juice (from 1 lemon)
Shallot (1, diced)
Bacon (the more, the better. I usually use more than half of the package)
Cayenne pepper (about 1 teaspoon)
- Heat skillet over med heat. Add bacon–you can add prechopped pieces or just add the entire piece of bacon and crumble it later. I usually do the latter because I’m lazy. Cook until crispy. Remove from pan but leave the bacon grease.
- Add asparagus and saute in glorious bacon fat until starting to become tender and browned about 12 mins.
- Add leek, shallots, garlic and pine nuts, cook for another 3-5 mins over lower heat.
- Add lemon juice and cayenne. Toss to coat. Serve!
BOTTOM LINE: The best side dish I’ve ever made.
