WHO I MADE IT FOR?
Easy easy corn salad that I unfortunately cannot eat but can make really well. I always have a little bite when I make it. I usually use corn on the cob and slather the sauce on top of each section, but winter means we’re running scarce on fresh corn. Instead, this easy option can be made year round on the stove top. It’s also way easier to distribute and eat.
Frozen corn (1 bag, I found “grilled frozen corn” which added some nice flavor)
Red onion (1 diced)
Cotija cheese (1 cup, grated finely)
Mayo (3-4 tablespoons)
Paprika (1 tablespoon)
Cumin (1 teaspoon)
Chipotle powder (1 teaspoon)
Cayenne pepper (1 teaspoon, or more or less to taste)
Lime juice (1 tablespoon)
- On stove top, cook frozen corn until heated through. Drain and add to bowl.
- Add onion, cheese, mayo, paprika, cumin, chipotle powder, cayenne pepper and lime juice. Mix well.
BOTTOM LINE: Two steps and BAM.
