WHO I MADE IT FOR?
I think I’ve made this dish about 1,000 times. I know that seems like a lot but it was one of the first things I learned to make when I was learning how to cook. It’s so simple but so good. The olive oil and salt are almost the stars of this dish. Use high quality of each and you’ll notice a difference.
Black beans (1 can, drained)
Avocado (1, diced)
Grape tomatoes (1/2 box, sliced in half)
Cilantro (3 tablespoons, minced)
Scallions (2, sliced, white parts only)
- Mix beans, avocado, tomatoes, cilantro, and scallions in a bowl. Drizzle with olive oil and salt to taste.
BOTTOM LINE: easy easy side dish that goes with a variety of cuisines.
